Potatoes Au Gratin

1 ½ cup light cream 1 ½ tsp salt 2 lbs new potatoes, very thinly sliced ¼ tsp pepper 1 cup grated Gruyere cheese (6 oz)
Preheat oven to 350 degrees. In a small pan, heat cream until bubbles form around edge. Pour ¼ cup cream into 1 ½ quart baking dish. Arrange 1/3 of the potatoes on top of cream. Sprinkle with 1/3 salt, dash pepper and 1/3 of the cheese. Repeat process until all ingredients are used ending with the cheese on top. Set the baking dish in a larger shallow pan. Pour hot water to 1” level in the larger baking dish. Bake covered for 30 minutes then bake uncovered for one hour.
