Gazpacho Soup

September 2010

4 cups tomatoes                                          2 cups cucumbers

      2 cups bell pepper                                       1 Tbl. White balsamic

  ½ cup extra virgin olive oil                         Salt/pepper to taste

 

Blend all ingredients together and add olive oil slowly while pureeing.  Strain the soup and season with salt and pepper.

 

This recipe came from the Tomato Festival at

High Hand Nursery.

Enjoy while we still have good home grown tomatoes.
